Yesterday, a friend and I cooked for some friends, one of whom is vegan, so we cooked up a vegan Mexican feast! Although the majority at the table were carnivores, nobody missed the meat!

- Chocolate Avocado Mousse – took this recipe from the Tesco website. Just make sure your avocados are super ripe, otherwise you’ll have chunks of avocado in your pudding which isn’t very nice! I also used soy milk, which worked just fine!
