Recipe: Shakshuka

Shakshuka is the most amazing and filling breakfast dish which originated in the Middle East. You can really play around with what you put in it too, which makes it a great dish to use up that one odd veg in your fridge or that half onion that’s stinking up the fridge.

This one was made by frying half a medium onion (chopped quite roughly), with half a red pepper (equally roughly chopped) in some olive oil. I then added some passata which I had left over from a pasta sauce the day before – then added two eggs end whacked under the grill on full blast for 2 minutes.

Sprinkled some coriander on top and then enjoyed dipping some grilled stale bread. Delicious and ready in ten minutes.
