My favourite breakfast, extremely versatile and these keep well for a few days which makes them ideal for mealprep!
- 2 bananas (ripe!)
- 2 eggs
- ½ cup rolled oats
- ½ teaspoon baking pwoder
- pinch of salt
- maple syrup, to serve (optional)
- fresh fruit of your choice, to serve
Blend it all up, leave to stand for 5-10 minutes, pour dollops into a pan and fry till golden. Done.
(Make sure your pan isn’t too hot, these burn easily!)
