STOP BUYING CHICKEN BREASTS!
Sorry for shouting, but this has got to stop. They’re bland and expensive. Instead, buy a whole chicken or chicken thighs. Tastier meat, lower price = win-win. Just my opinion, of course.

Basic roasting principles:
Either roast the chicken with skin on – or if you want to roast it without skin, you will need to make sure it’s covered in something liquid in order for it not to dry out. When roasting chicken thighs in jerk marinade, I like to keep them covered with a lid until the last 10 minutes.
A whole chicken (1.6kg) is likely to need about 1 hour 20 minutes on 190 degrees, but do check on it periodically and once the juices run clear when you poke it with a knife, you’re done. It’s also a good idea to cover the chicken and let it rest before serving.
Chicken likes to have some flavour – so go crazy with herbs and spices!
If you’re doing meal prep for a week or so, you can roast multiple flavours of chicken at the same time – cooking time will be the same, but it’s nice to mix it up a bit – for this, chicken thighs are ace as they’re so easy to portion up!
